Turkey Pies

So I bought one of these,
I thought it would be a perfect idea to put in some turkey leftovers from the holidays. Boy was I right!
Slice up some turkey to bite size pieces.
Unroll the pie dough and cut a 4.5 by 3 inch rectangle.
Fill the inside with pesto.
A few slices of mozzarella cheese.
Lastly, fill with turkey.
Brush the edges with egg white. Place another pie dough piece on top and seal them together.
Brush with egg whites and pierce with a fork then bake.
These were fantastic!
Recipe makes 6 pies
1 box of refrigerated pie crust
3 cups chopped turkey
Sliced mozzarella
1 egg white
Pesto sauce
Pre heat the oven to 400 degrees. Roll out the pie dough and cut 4.5 by 3 inch rectangles. You should get about 5 per pie dough sheet and then have to re-roll out the dough for one more.  Spoon a layer of pesto sauce on six of the cut outs. Add a slice or two of mozzarella cheese. Top with about a quarter cup of turkey.  Brush egg whites around the edges of the dough. Place another dough piece on top and seal. Brush the top of the pie with egg white, pierce with a fork. Place on greased cookie sheet and bake for 18 to 20 min or until golden.
If you have extra pie dough at the end, make some mini cinnamon rolls. Roll out the dough and brush it with some butter, sprinkle with cinnamon and sugar. Slice some strips and roll them. You can throw them right in with the pies.
